Poppy Cinnamon Parfait with Warm Merlot Cherries

for 10 people

Ingredients
40 g ground poppy seeds
200 ml milk 3,5 % fat
1 tbsp cinnamon powder
4 egg yolk
2 eggs
150 g sugar
400 ml cream

Cherries:
2 oranges
1 lemon
2 cinnamon sticks
1 L Merlot
1 kg cherries

Preparation
Parfait:
Cook the poppy seeds in just over half of the milk until soft, and leave to get cold.
Let the cinnamon powder steep in the rest of the milk for 5 minutes and leave to get cold.
Beat the egg yolks, eggs and sugar over steam until creamy. Take off the steam and stir until cold. Fold in the whipped cream.
Divide the parfait into 2. Mix one half with the poppy milk and the other with the cinnamon milk. Layer in forms and freeze.
Cherries:
Pip the cherries and poach in a stock of orange and lemon juice, lemon rind, cinnamon sticks, water, sugar and wine.
Serve hot.
